אַל־תֹּאכְל֤וּ מִמֶּ֙נּוּ֙ נָ֔א וּבָשֵׁ֥ל מְבֻשָּׁ֖ל בַּמָּ֑יִם כִּ֣י אִם־צְלִי־אֵ֔שׁ רֹאשׁ֥וֹ עַל־כְּרָעָ֖יו וְעַל־קִרְבּֽוֹ׃

Core Text — Mechilta (via Torah Temimah)

הַנִּצְלֶה מִן הַחַי, וְלֹא הַמְּבֻשָּׁל.

English: That which is roasted from the raw state, and not that which was cooked.

Definition of valid fire-roasting: it must begin from the uncooked animal.

One may not cook first and then roast; roasting must start from the raw meat.
