וַיַּ֨רְא יוֹסֵ֣ף אִתָּם֮ אֶת־בִּנְיָמִין֒ וַיֹּ֙אמֶר֙ לַֽאֲשֶׁ֣ר עַל־בֵּית֔וֹ הָבֵ֥א אֶת־הָאֲנָשִׁ֖ים הַבָּ֑יְתָה וּטְבֹ֤חַ טֶ֙בַח֙ וְהָכֵ֔ן כִּ֥י אִתִּ֛י יֹאכְל֥וּ הָאֲנָשִׁ֖ים בַּֽצׇּהֳרָֽיִם׃
When Joseph saw Benjamin with them, he said to his house steward, “Take those men into the house; slaughter and prepare an animal, for at noon they will dine—with me.”
Torah Temimah points to Chullin (R’ Yose b. R’ Chanina).
וטבוח טבח והכן. א״ר יוסי ב״ר חנינא, מאי דכתיב וטבוח טבח והכן, וטבוח טבח – פרע להם בית השחיטה, והכן – טול גיד הנשה בפניהם.
English of Core Text: “And slay and prepare…” R’ Yose son of R’ Chanina said: What is meant by “slay and prepare”? “Slay” — expose the place of slaughter to them; “and prepare” — remove the gid ha-nasheh in their presence.
On the daf / in context: The derash explains that Yosef arranged the meal so that the brothers would see the proper Jewish method of slaughter and the removal of the sciatic nerve, reassuring them that they were not being served nevelah.

What Is Learned: Yosef had the animal slaughtered and the gid ha-nasheh removed openly so that his brothers would know the meat was prepared according to the law of Israel.
