מִבְּשָׂרָם֙ לֹ֣א תֹאכֵ֔לוּ וּבְנִבְלָתָ֖ם לֹ֣א תִגָּ֑עוּ טְמֵאִ֥ים הֵ֖ם לָכֶֽם:

English: You shall not eat of their flesh, and you shall not touch their carcasses; they are impure for you.

מִבְּשָׂרָם. מִבְּשָׂרָם וְלֹא מִן הָעֲצָמוֹת וְלֹא מִן הַגִּידִים וְלֹא מִן הַטְּלָפַיִם שֶׁלָּהֶם.

Textual limitation — “Their flesh” limits the eating prohibition to flesh rather than bones, sinews, and hooves.

The wording מבשרם limits the prohibition to flesh and excludes bones, sinews, and hooves from the specific Torah prohibition of eating their flesh.
